Heavenly Apricot Cake

Apricot is one of my favorite fruits of summer time. I find the color so bright and beautiful. This sour sweet fruit is so inspiring for any type of baking. As a baker any beautiful ingredients is a motivation to develop a new recipe.

Method used: one bowl method

Makes one 8 inch cake (tall pan)


Ingredients

Butter and oil 1/2 cup

Flour 1.5 cups (231gr)

Sugar 1 cups (245gr)

Almond Flour 1/3 cup

Milk 1/2 cup

Yogurt 1/4 cup

Unsweetened applesauce 3 Tbsp

Eggs 3 L

Pure Vanilla Extract 1tsp (5ml)

Baking Powder 1/2 Tbsp (7.5ml)

Salt 1/4 tsp

Fresh apricots 3-5 (depending on the size)


Preparation

Pre-heat oven 350 degrees F

Prepare a 8 inch cake pan and set aside

Sift flour, sugar, baking powder, and salt (dry ingredients) in a big bowl, mix together and set aside

Slice the apricots, vertical slices (not too thin) and set aside

In a separate bowl mix oil, eggs, vanilla extract, milk, yogurt, and unsweetened applesauce (wet ingredients)

Using a hand mixer beat butter into the dry ingredients, and then add the wet ingredients and beat on low speed

Pour batter into prepared cake pan, cover the top completely with apricot, and bake until toothpick inserted in the center comes out clean

Once the cake is completely cool, take it out of the pan and transfer to a serving plate. Then dust it with icing sugar, or drizzle with icing sugar glaze (mix of icing sugar and water)


NOTE:

This cake is ideal for tea party or brunch in summer time

Bring butter, eggs and dairies to room temperature
