Coconut Nutsy Cake

I am in love with nuts, and growing up in Iran meant having nuts as a snack all the times, from fresh to raw dried or salty toasted.

When I started developing recipes, I decided to add more nuts and coconut and almond flours in replacement of regular flours.




If you check this recipe the amount of flour that has been used is very low. Obviously this makes a healthier version of sweet, which you can still enjoy it very much.



Also adding rose water, yogurt and milk makes this cake extremely moist, delicious and flavorful. #Cardamom in the other hand is one of the unique ingredients that in combination with rose water is used in a lot of traditional #Persian bakings.



The taste is so unique and the cake is so light that I will promise you will go for a second slice.




Makes One 8 cake or 9 inch tall cake

Serving up to 8-12

Prep and baking time 1.5 hour

Method One bowl


Ingredients:

🌸Flour 1/2 cup

🌸Almond Flour 1/2 cup

🌸Walnut (finely grinded) 1/2 cup

🌸Unsweetened Coconut Flour 1/2 cup

🌸Sugar 3/4 cup

🌸Baking powder 1/2 Tbsp (7ml)

🌸Salt 1/4 tsp

🌸Cardamom 1/2 tsp

🌸Eggs 3

🌸Milk 1/2 cup (room temp)

🌸Yogurt 1/4 cup (room temp)

🌸Rose Water 3 Tbsp

🌸Butter and oil 1/2 cup (1/4) (room temperature butter)


Directions:

💖Pre-heat oven 350 F


💖Grease the cake pan and line the base with parchment paper


💖Sift flour and sugar in a big bowl, and then add the coconut flour, almond flour, baking powder , salt, and cardamom, now mix using a spatula and set it aside (these are your dry ingredients)


💖Now add your room temperature butter to the dry ingredients and beat on low speed using a hand mixer . It should be mixed well enough creating a sandy texture


💖In a different bowl, break your eggs, add milk, yogurt, rose water and oil. (These are your wet ingredients) Use a whisk to mix all the wet ingredients


💖Now slowly add the wet ingredients to your dry ingredients mixing on low speed using a hand mixer, until everything is throughly mixed


💖Then add the walnuts and mix using a spatula (don’t over mix)


💖Pure into the cake pan, add some coconut and crushed walnut on top if you like and bake it for 45 minutes or until inserting a toothpick in the middle comes out clean


💖Once the cake is out of oven, leave it to completely cool down, then run a knife around the edge of the pan for an easy release


💖Transfer it to a pretty plate and to decorate dust it with some icing sugar and then add rose petals


💖This cake makes a perfect afternoon tea cake
